About the Author

Wendy Turnbull was officially diagnosed with Celiac Disease over 30 years ago. The wheat flour substitute she was directed to eat, consisting of white rice flour and tapioca starch, proved unacceptable. Baked goods lacked taste and eye appeal and were dry and crumbly. Thinking there had to be an alternative, Wendy began experimenting with whole grain gluten-free flours.

GEMS flour evolved through a process of trial and error. The superior quality of baked goods using GEMS flour was gratifying. With this book, Wendy hopes to give everyone an opportunity to make their own personal gluten-free diet a satisfying and enjoyable experience.
